50th Episode: Seared Duck with Blueberry Sauce & Vegetable Medley

Seared Duck Breast with Blue Berry Sauce &
Vegetable Medley

Seared Duck Breast
Ingredients
2 -4oz. duck breasts with skin on
2 tablespoons Tone’s® Paprika
2 tablespoons Tone’s® Salt
2 tablespoons Tone’s® Garlic Powder
1 tablespoon Tone’s® Pepper
1 tablespoon Tone’s® Cayenne Pepper
1 tablespoon Tone’s® Italian Seasoning
1 tablespoon Weber® Bold Chipotle Seasoning
2 tablespoons oil for searing

Make
•Score each breast by cutting 4 small slits in the duck skin across the breast.
•Combine all seasoning ingredients and mix well. Sprinkle each breast with seasoning on both sides.
•In a medium skillet, heat oil over medium-high heat. Sear the duck breasts, skin side down until skin is crisp, about 2-3 minutes. Turn breasts over to sear the other side another 2-3 minutes. (Depending on the temperature desired, you can put breasts in the oven at 350⁰F for 5-6 minutes after searing.) Plate and serve.

Blueberry Sauce
Ingredients
1 tablespoon oil
1 teaspoon garlic
½ shallot, chopped
1 cup blueberries
¼ cup Triple Sec
1 blood orange, halved
Tone’s® Salt & Pepper to taste

Make
•In a small sauce pan, heat oil. Sauté shallot and garlic for 1 minute.
•Add Triple Sec, blueberries and blood orange halves and cook for about 5 minutes over medium heat. Season with Tone’s® Salt & Pepper to taste and serve on top of duck breasts.

Vegetable Medley
Ingredients
2 tablespoons oil
1 teaspoon garlic
½ shallot, chopped
1 medium zucchini squash, halved & sliced
1 medium yellow squash, halved & sliced
½ small red onion, rough chopped
4 medium mushrooms, rough chopped
Tone’s® Salt to taste
Tone’s® Pepper to taste
½ cup Triple Sec

Make
•In a medium sauté pan, heat oil over medium-high heat. Cook the shallot and garlic for 1 minute until soft.
•Add all the vegetables and sauté for 1-2 minutes. Add Triple Sec and season with Tone’s® Salt and Pepper to taste. (Vegetables should not be mushy.)
•Plate and serve as a side.
