Sam’s Club Feature Recipe: Raspberry Vinaigrette & Fresh Berry Salad

Raspberry Vinaigrette

1 cup raspberry vinegar
1 tablespoon shallot, finely chopped
1 tablespoon fresh garlic, finely chopped
1 tablespoon Creole mustard
1 tablespoon herb blend (fresh rosemary and thyme)
1 cup fresh raspberries (available at Sam’s Club®)
Zest of ½ lemon
4 cups corn oil
Tone’s® Salt & Pepper to taste

•Put all ingredients, except corn oil and salt and pepper, into a food processor and blend until smooth.
•When mixture is smooth, slowly add the corn oil until vinaigrette is right consistency.
•Finish by seasoning with Tone’s® Salt and Pepper to taste and serve with salad.

Fresh Berry Salad
*all produce available at Sam’s Club®
2 heads romaine lettuce, chopped
½ head iceberg lettuce, chopped
1 cup spring mix salad
½ pint fresh raspberries
½ pint fresh blackberries
½ pint fresh blue berries
5 large strawberries, quartered

•Mix all the lettuce together in a large bowl.
•Plate the lettuce on 4 plates and top each with a mixture of the berries.
•Pour raspberry vinaigrette over salad and serve.

Makes about 4 servings.
