Smoked Chicken Taco’s

Smoked Chicken Taco’s
1 -5lb. Tyson® Whole Chicken
3 tablespoons Tone’s® Salt & Pepper Seasoning
1 tablespoon Tone’s® Granulated Garlic
2 tablespoons Tone’s® Paprika
2 tablespoons Tone’s® Cayenne Pepper
2 tablespoons Tone’s® Chili Powder
1 tablespoon Tone’s Onion Powder
1 tablespoon ground coriander
1 tablespoon ground fennel seed
4 -10in. flour tortillas
1 small pineapple, diced
1 small red onion, diced
1 small head iceberg lettuce, shredded

•Start smoker with your choice of wood. Bring the temperature to 250⁰F for cooking.
•In a small bowl combine all the spice ingredients and mix well.
•Season Tyson® Whole Chicken generously on all sides with spice mix.
•Place chicken in smoker for 4 hours, then let rest for 15 minutes. Then, pick pieces of meat from bones for tacos.
•On a flat grill, heat flour tortillas for about 1 minute and remove from heat.
•Add to the top of the flat grill 1-2 cups of chicken, pineapples and onions for a little less than a minute, then fill tortillas.
•Finish tortillas with shredded lettuce and serve with your favorite salsa.

Chicken must be cooked to an internal temperature of 170 degrees and 180 degrees for bone in raw chicken products.
