Southern BBQ Chicken Pizza

Pizza Sauce Ingredients
44 oz. favorite ketchup
1/2 cup molasses
2 tablespoons Tone’s Chili Powder
1 tablespoon dry sage rub
1 tablespoon Tone’s Cumin
1 tablespoon Tone’s Parsley
1 tablespoon Tone’s Sweet Basil Leaf
2 tablespoons honey
1 cup red wine
1 tablespoon Sambal
1 tablespoon Tone’s Italian Seasoning
1 cup apple cider vinegar

Make
•Place all ingredients in a medium sauce pan on medium-low heat; combine with a whisk.
•Bring to an easy boil, and then reduce heat to simmer for about 1 hour.
•Serve on top of pizza.

Pizza Crust Ingredients
2 -1/2 cups flour (reserve 1/2 cup for working dough)
2 tablespoons sugar
1 teaspoon Tone’s Salt
Dash Tone’s Italian Seasoning
1 tablespoon vegetable oil
2 cups warm water
1 pack pizza yeast active

Make
•Preheat oven to 400⁰F.
•Using a mixer, combine 2 cups flour, and the sugar, salt and Tone’s Italian Seasoning. (Spray mixing paddle with vegetable oil to prevent sticking.)
•In a small pitcher, combine the pizza yeast and 2 cups of warm water—using a spoon to stir. Let sit for about 5 minutes to activate yeast.
•With the dough hook for the mixer on medium speed, add the water/yeast mixture slowly to the flour mixture until the paddle holds the dough ball gently. Remove dough ball and place in a medium bowl and sprinkle with extra flour; cover until dough has risen.
•Once dough has risen, remove and shape dough into pizza crust with fingers, turning it often to make a nice rim.
•Flour a pizza pan to prevent sticking, and bake in oven at 400⁰F for 3-4 minutes. Remove and top with favorite sauce and toppings.

Pizza Topping Ingredients
1 Tyson Chicken Breast, cut into chunks
Tone’s Salt & Pepper to taste
1 cup BBQ sauce (see recipe above)
Fresh spinach to taste
Five cheese Italian to taste
Monterey Jack cheese to taste
Fresh cilantro to taste
Bacon, chopped to taste

Make
•Oven should still be at 400⁰F from crust, or preheat to 400⁰F.
•Sauté chicken in pan over medium-high heat; when done set aside.
•Remove crust from oven.
•Add BBQ sauce to the ridge of crust. Then add spinach, chicken, five cheese Italian and Monterey Jack cheese.
•Bake at 400⁰F for 10-12 minutes. Remove and add fresh cilantro and diced bacon for extra flavor; serve.

Chicken must be cooked to an internal temperature of 170 degrees and 180 degrees for bone in raw chicken products.

Alley Shooter
Ingredients
Ice
1 oz. Grand Marnier
1-1/2 oz. Frangelico
1-1/2 oz. amaretto
2 oz. vodka
1-1/2 oz. Bailey’s Irish Cream
3 Blackberries, garnish

Make
•Fill shaker with ice.
•Add Grand Marnier, Frangelico, amaretto, vodka and Bailey’s Irish Cream. Shake well.
•Pour into glass and garnish with blackberries if desired.
