Fruit Cups with Lemon Cream & Sunshine Cocktail

Lemon Cream
2 cups heavy whipping cream
1 lemon zest, entire lemon
1 teaspoon Argo® Cornstarch

•In a medium mixing bowl, combine all ingredients until the mixture peaks.
•Place in refrigerator for at least 30 minutes before using.

Fruit Cups
Lemon cream (see below)
5-6 blackberries, per cup
1 banana, sliced
4 cherries, pitted & cubed
15-20 blueberries, per cup
11 raspberries, per cup
3 strawberries, cubed
2 cherries, garnish

•Layer serving dishes with fruit and cream.
•Start with a dollop of lemon cream to the bottom of serving glass/dish
•Add blackberries, bananas, cherries and blueberries.
•Add another dollop of lemon cream.
•Rim the glass with raspberries and add strawberries and raspberries on top of lemon cream. Garnish with cherries and serve.

Sunshine Cocktail
2 oz. daiquiri mix
1 oz. orange juice
1 ½ oz. triple sec
2 oz. sparkling wine (such as Proseco)
Orange wedge, garnish

•Fill shaker with ice.
•Pour all ingredients, except sparkling wine, into shaker. Shake until chilled.
•Pour into martini glass half-way, and then fill remaining glass with sparkling wine.
•Garnish with orange wedge if desired and serve.
