Pan Fried Chicken & Grits
Southern Sunrise Martini

Chicken & Grits

1 cup grits
5 cups water
Ground breakfast sausage
4 Airline chicken breasts
Tone’s Salt & Pepper to taste
Tone’s Cayenne Pepper to taste
Tone’s Granulated Garlic to taste
Fresh parsley, chopped
1 tablespoon oil
1/2 Goat Cheese log

Gravy Ingredients
3/4 cup flour
1 1/2 cups water
Tone’s Salt & Pepper to taste
Fresh parsley, chopped

•Preheat oven to 350⁰F.
•Place ground breakfast sausage in pan that has been cooked and drained, and add 1 cup grits to pan with 4 cups of water. Bring to a boil.
•Slice goat cheese and fresh parsley and set aside.
•In a mixing bowl, add Tone’s Salt & Pepper, Tone’s Cayenne Pepper and Tone’s Granulated Garlic. Mix with your hands. Season both sides of the chicken breast with seasoning mixture.
•Place Airline chicken breasts in hot pan, skin-side (no seasoning) down with oil—sear on one side and flip, adding seasoning to the other side.
•Then, place chicken breast in pan and place in the oven at 350⁰F for 15-18 minutes. Save pan drippings.
•While chicken is baking, add goat cheese and parsley to the grits.
•After about 15-18 minutes, remove chicken from oven. Go back to the pan and on medium heat, add flour and combine with drippings to make gravy. Add 1.5 cups of water and stir. Season with Tone’s Salt & Pepper to taste and fresh parsley.  (You may continue to add water for your desired consistency for the gravy.)
•Plate chicken and drizzle with gravy; serve with a side of sausage and cheese grits.

Chicken must be cooked to an internal temperature of 170 degrees and 180 degrees for bone in raw chicken products.

Southern Sunrise Martini
1/4 oz. Southern Comfort
1/4 oz. orange juice
1/4 oz. Grenadine
1/2 lemon, squeezed
Mint, garnish
Strawberries, cubed-garnish

•Fill shaker with ice. Add orange juice, Southern Comfort and lemon juice; cover and shake well.
•Add Grenade to the bottom of your glass and pour drink. Garnish with mint and cubed strawberries if desired and serve.
