Grilled Skirt Steak Tacos
1 skirt steak (flat iron will work)
Weber® Bold Chipotle Seasoning to taste
1 tomato, seeded & diced
1 cup red onion, finely diced
1 handful cilantro leaves, rough chopped
Shredded cheddar cheese to taste
2 jalapeno peppers
•Preheat grill to high heat.
•Unwrap skirt steak and rub gently with vegetable oil.
•Season steak generously with Weber® Bold Chipotle Seasoning; cover and set aside until steak comes to room temperature.
•Prepare toppings for tacos: seed and dice tomato; dice onion; and rough chop a handful of cilantro leaves. Place cheddar in small bowl.
•Once grill is hot, rub vegetable oil over the jalapeno peppers.
•Place peppers and steak on the grill over direct heat and cook for 2 ½ minutes per side (for a medium-rare steak).
•Remove steak and let rest for at least 5 minutes. Continue cooking peppers another 3-4 minutes turning often until they have a nice char over them.
•Remove and let cool for a few moments before seeding and slicing.
•Slice steak about a quarter inch thick, slicing across the grain of the meat.
•Fill tortillas to your like, serve with guacamole* and enjoy.
2 ripe avocados
1 clove garlic, minced
2 big tablespoons red onion, finely diced
½ lime, juiced
½ tomato, seeded & diced
½ roasted jalapeno, seeded & diced
Fresh cilantro, finely chopped
Tone’s® Salt & Pepper to taste
•Cut avocados in half around the pit. Remove the pit and score the inside with a butter knife and scoop the flesh out with a spoon into a small bowl.
•Add garlic, onion, lime juice, tomato, jalapeno, and cilantro. Combine mixture with a fork until it reaches your desired consistency. Season with Tone’s® Salt & Pepper to taste before serving with tacos.
