Healthy Spin on Super Bowl Splurges

Food is a big part of the big game, but there are ways to take your favorite splurges and make them a little healthier.

Food is obviously a big part of the big game, but there are ways to take your favorite splurges and make them a little healthier.

Mercy Executive Chef Brad Bulot spoke about some healthier options.

"Biggest food issues are just the hidden fats and calories that are in the normal snacks that everyone is consuming on that day," Bulot said.

Bulot made a staple 7 Layer Dip but took away many calories and fat and added more nutrients in this recipe.

"What we've done is substituted sour cream, the normal sour cream with fat free. Instead of purchasing a commercially made guacamole, we've made it from scratch. Also added some beans, instead of the refried beans, canned pinto beans that are low sodium, so you're still getting the bean flavor and the fiber and everything that's the really good part of it but without all the added fats," he said.

Americans are expected to consume more than 1.2 billion chicken wings, just on Super Bowl Sunday. But there are some good alternatives. 

"We've taken chicken breast and made a couple different options there that still have bold flavor profiles. We've started with a zesty lemon thyme skewer and we've also made some Teriyaki chicken bites from chicken breast as well.

Whether or not you're still going to have some of those favorite splurges, these are going to be great options to also have on your Super Bowl spread.

Below are three recipes Chef made on KNWA Today and the Fox Morning Edge Friday morning.

Zesty Lemon Chicken Skewers
Serving: 2 skewers
Number of Servings: 6

2 pounds chicken tenders, 99% fat free
1/4 cup lemon juice
1 Tbsp lemon zest
1/2 cup vodka
3 Tbsp honey
1 Tbsp extra virgin olive oil
1 Tsp salt
1 Tsp pepper
2 Tsp fresh thyme

Soak bamboo skewers in water
Mix all ingredients (expect chicken) in a gallon size freezer bag. Add chicken and seal. Mix to coat chicken and refrigerate for 2-12 hours to marinate.
Preheat over 425. Thread chicken on skewer and lay in single layer on greased baking pan.
Bake about 30 minutes until chicken is browned and internal temperature is at least 165.
