Skillet Shrimp with Feta Cheese & Spinach Salad with Mandarin Oranges

Spinach Salad with Mandarin Oranges
Baby Spinach
1 Mandarin Orange
½ small Red Onion
Salad Dressing of choice

•Segment mandarin oranges, and then set aside.
•Halve onions, peel, then slice into half-moon shapes.
•Spread both mandarin oranges and red onions over the top of the baby spinach. Coat with salad dressing.

Salad Dressing
1 – 1 ½ Tablespoon Orange Marmalade
¼ cup Red Wine Vinegar
½ cup Oil
Tone’s Salt and Pepper to taste

•Take about a tablespoon of Orange Marmalade or about a tablespoon and a half and put it in our mixing bowl.
•Add red wine vinegar, and season with salt and pepper. Combine.
•Drizzle in oil – making sure to combine well.

Skillet Shrimp with Feta Cheese
1 Clove Garlic, chopped
1 Cup Cherry or Grape Tomatoes, halved
1 Tablespoon Green Onions, chopped
1 Tablespoon Scallions, chopped
3 ounces Frozen Medium Shrimp
1/8 Teaspoon Tone’s Sea Salt and Pepper
Dried Oregano or 1/8 Teaspoon Tone’s Oregano
Feta Cheese Block; 1 Tablespoon Feta Cheese

•Heat oil in pan.
•Crush garlic and finely chop; halve tomatoes and add tomatoes and garlic to heated pan.
•Chop green onions and scallions and add to pan.
•Add shrimp to the pan, and season with sea salt, pepper and dried oregano. Stay close to the shrimp to avoid overcooking. Turn shrimp in the pan as needed to avoid overcooking. Cook over medium or medium-high heat.
•Crumble a block of feta into a separate bowl. Add feta cheese and green onions to the skillet. Turn until finished.
•When shrimp turn pink, they are done. Toss salad with the shrimp.

Bellini Mini Martini
¼ C Vodka
¼ oz. Peach Schnapps
2-3 Raspberries

•Add ice to the bottom of the shaker.
•Add ¼ cup of vodka and ¼ oz. peach schnapps and shake thoroughly.
•Add champagne.
•Skewer raspberries on a toothpick and garnish with a sprig of mint; set it on the edge of the glass.
