Chocolate Chip Double Doozies

-makes 8 double doozies-

¾ cup butter, melted and cooled a little

2 cups flour

1 cup brown sugar

½ cup sugar

½ teaspoon baking soda

½ teaspoon salt

1 egg + 1 egg yolk

1 tablespoon vanilla

2 cups chocolate chips

Preheat the oven to 325F.

Melt butter; set aside. Mix flour, soda, and salt; set aside. Cream butter, sugars, eggs, and vanilla. Add dry ingredients; mix until combined. Stir chocolate chips into dough by hand.

Drop by spoonfuls on a baking sheet lined with parchment or a silicone mat. Bake for 15 minutes or so until golden brown. Start checking for doneness at 13 minutes and check in two minute increments. Remove from oven and allow to cool entirely.

For the frosting, mix together 4 cups powdered sugar, 1 cup shortening, and 1-2 teaspoons of vanilla until combined and smooth.

Spread frosting between two cooled cookies to make a sandwich, then decorate with sprinkles if you’d like!
